This is a recipe from Jean Pare, a Canadian staple on the cookbook front with her "Company's Coming" series of cookbooks. I have been making it for years, sharing it on various other websites.
She uses a lot of condiments and canned soups in her recipes, things that many people have in their cupboard. I'm not a huge fan of that, but she has some really good recipes which are great in a pinch. This is one of them.
My sister has used this as her "company dish", it cooks and presents beautifully. You can use any cut of chicken, even roasting a whole chicken basted in this sauce.
Double or triple the sauce ingredients as you need for the amount of chicken you'll use.
Honey Mustard Tarragon Chicken
Jean Pare's "Company's Coming: Main Meals"
serves 4
chicken for 4 people
1/4 cup yellow mustard, or dijon mustard
1/4 cup honey
1 tablespoon dried tarragon
Preheat oven to 425F.
Mix the mustard, honey, and tarragon in a bowl.
Put the chicken in an oven proof dish and spoon sauce over chicken, making sure to coat each piece with some sauce.
Bake in the oven for 35 minutes, or until juices run clear.
Please don't undercook your chicken! I know that sounds obvious, but I have seen comments on other chicken recipes at Allrecipes that say "My chicken wasn't cook at 45 minutes so I'll never make this recipe again!" or "Not cooked at 35 minutes but we ate it anyway as recipe said 35 minutes." Cook it until it's done.
